Resumen
En este trabajo se describen los requisitos de la cadena del frío en el transporte y distribución de productos perecederos sensibles a la temperatura: alimentos y productos farmacéuticos. En primer lugar, se describen las tecnologías existentes para el registro de temperatura, tanto termómetros como registradores, con su electrónica asociada, así como los equipos con transmisión de datos a través de la red hasta una nube. En segundo lugar, se realiza un resumen de la normativa asociada en Europa, donde se ha desarrollado la misma con objeto de establecer los requisitos técnicos de los sistemas de registro de temperatura para así garantizar la fiabilidad de los datos, su trazabilidad a patrones nacionales, así como la garantía que los datos almacenados no sean manipulables. La importancia de asegurar la cadena del frío supone un reto y una necesidad para asegurar la calidad de, no solo, productos alimenticios, también de productos farmacéuticos de los que depende la salud de la población.
This paper describes the requirements of the cold chain in the transport and distribution of perishable products sensitive to temperature: food and pharmaceutical products. Firstly, the existing technologies for temperature recording are described, both thermometers and recorders, with their associated electronics, as well as the equipment with data transmission through the network to a cloud. Secondly, a summary of the associated regulations in Europe is made, where it has been developed in order to establish the technical requirements of the temperature recording systems in order to guarantee the reliability of the data, its traceability to national standards, as well as the guarantee that the stored data cannot be manipulated. The importance of ensuring the cold chain is a challenge and a need to ensure the quality of, not only food products, but also pharmaceutical products on which the health of the population depends.
