The church of San Pedro de La Mata (Sonseca, Toledo) is a key monument in the history and archaeology of the Early Middle Ages in the Iberian Peninsula. After the archaeological works recently published, this paper aims to approach in detail the quarries of granite exploited for the construction of this building. These are areas of exploitation worked out along the centuries, which have been therefore subject to successive extractive activities all throughout the history. This work focuses on the extractive techniques, on the influence of the geology when quarrying and on its coordination with the building activity of this church by taking into account the ancient remains of the latter and of the ancient extractive outcrops preserved.
